Started by husband and wife team, David Makin and Zoe Delany, Axil Coffee Roasters have covered some good ground in establishing themselves as one of Melbourne’s specialty coffee institutions. After years of success on the coffee competition circuit they opened their flagship store Axil on Burwood Road, Hawthorn. At the heart of what Axil does is to source and roast amazing coffees. This stems from loyal, long-term relationships created with producers that they can honestly call their friends. When they travel the globe to visit the coffee farms they stay with them on the farm, fully experiencing and being exposed to the year that’s been. 95% of Axil’s coffee is sourced through direct trade relationships. This approach means they constantly have the closest connection possible at all times with their direct trade relationships. Enabling an understanding of the coffees story right at the source ensures the absolute finest quality of coffee possible. “The effort we consistently make to reinforce our commitment to our coffee relationships is a big part of us now sourcing almost all our coffee directly,” explains co-head roasted Matthew Lewin. “The more we grow, the more we learn, the more we can continue to showcase the work of our coffee producers and they’re beautiful coffee.”

Back home in Hawthorn, Melbourne, Matthew Lewin and Matthew Crowley head up the roasting together. Matthew Lewin has been with Axil Coffee Roasters from the beginning, it was here learnt the ropes on how to roast. “I’ve travelled much of the globe as a buyer of specialty coffee for Axil, creating many wonderful relationships. I’ve judged national coffee competitions here and overseas,” he explained. Matt can remember as a boy his Dad taking him to a friends small coffee roastery cafe in Melbourne. He instilled a love for coffee at a very young age and now it’s a big part of his life, he lives and breathes specialty coffee everyday, continually going further down the rabbit hole. “It’s an amazing industry that has shaped my life in such an enriching way. For the future I want to be involved, help to represent it as best I can, continue to develop it, work with people on all levels, to keep improving our industry.”

Colombia – La Emerelda
Alexander Hernandez is the owner of the La Esmeralda farm in Motebonito, Pitalito, Huila. Alexander and his family work together on the farm, contributing to the quality control and production. At La Esmeralda the Caturra and Colombia strains have been frown and processed to their full potential. This small 9 bag lot is exclusive to Axil and displays complex fruit, citrus & sweetness notes in the cup.
Ethiopia – Gelana Abaya
In 2014 Axil Coffee travelled to the Gelana Abaya mill and we were amazed at how reflective the surrounds were of the coffee; elegant, structured and with natural beauty. Gelana Abaya is another gem of a region in Yirgacheffe. This area is nestled between Lake Abaya on the west and the town of Yirgacheffe on the East. This is the fourth year Axil has sourced Gelana Abaya and it just keeps getting better!
