Atomica Coffee began when Toli Avgerinos moved back to Melbourne after a stint of making coffee in Santorini. Toli’s first café was at the Parahan market in 1991. After noticing a lack of lack of flavour and depth in the beans, he began to experiment with his own roasts. Shortly after Atomica Coffee was born. In a small café in Brunswick street, Fitzroy, Toli began importing green beans and roasting on site.
‘You’ve got to imagine a small cafe with smoke pouring out the door, customers not really knowing what was going on and then discovering a great little place to come and not only have coffee but smell coffee and see it being roasted.’
The head roaster at Atomic is Matteo Secci and he definitely has his work cut out for him. ‘Atomica is unique in we ALWAYS, without exception; roast each single origin bean and then post-blends. Because we never batch-roast, you can be sure that when you’re enjoying one of our blends, that you’re getting the best out of every bean.’
Atomic takes no short cuts they source the finest quality green beans and roast them individually to ensure the perfect blend every time.
